Most of the time I love eating spicy chili garlic noodles but once in a while I have this urge to eat really creamy and scrumptious noodles with some umami flavor. This dish is very easy to make, you can prep it before hand and put together in 30 min or less. A warm, creamy recipe like this is perfect for cozy dinners.
INGREDIENTS :
1 diced onion
10 finely chopped garlics
10-15 medium/large sliced button mushrooms
1 diced capsicum
oil
salt
black pepper
paprika
oregano (or other herbs)
chili flakes
vegan mayonnaise / vegan cream
nutritional yeast
soy sauce
bread crumbs
coriander
RECIPE :
1. Add the diced onions to a pan with oil on medium heat. After a minute or so, add the finely chopped garlic and stir for 2 minutes. Then add capsicum and 3/4th of the mushrooms. Cook this for 3-4 minutes.
2. Time to add our spices. On low flame, add 1/2 tbsp black pepper powder, 1/2 tsp paprika powder, 1/2 tbsp oregano (or herbs of choice), 1/2 tbsp chili flakes and salt to taste. Combine this well.
3. Add 1 small cup of mayonnaise or cream to this and combine it all together. Now, this is optional but you can add 2 tbsp nutritional yeast to this. Mix well for a few minutes. Our sauce is ready.
4. On another pan, add the remaining mushrooms with some oil on high flame. Add some salt and black pepper to this. The mushrooms will loose water quickly and start becoming brown. At this stage, add 1 to 2 tbsp soy sauce and let the mushrooms turn brown. Don't burn them.
5. Optional step for garnish - mix 1 tbsp nutrional yeast with 2 tbsp bread crumbs and crisp this up on a pan.
6. Finally we assemble our dish. Add the cooked noodles to our sauce and combine this well. Now, add our roasted mushrooms to this.
7. Add our garnish on top (step 5) and top this up with coriander leaves. Our delicious dish is ready to enjoy.
