Being a pasta lover, I have always wanted a perfect sauce recipe that will be easy to make, full of flavor and also versatile so I can pair it up with variety of food combinations.
This Marinara sauce recipe is exactly that! It is tangy, tasty and works well for meal prep too.
I have made this one soooo many times now, I have lost count literally. It is my sister's favorite sauce to go with pasta.
Let's begin with the recipe.
INGREDIENTS :
6 small to medium tomatoes (nice red and ripe)
2 medium chopped onions
10 -15 garlic pods
quarter of a small red bell pepper
oil
1 tomato sauce
paprika
chili powder
black pepper
thyme
oregano
salt
RECIPE :
1. In a pan, heat up oil on low flame and add the chopped onions to it. Fry them until translucent. Add the garlic pods to this and fry till golden brown.
2. Add all the spices and herbs to this - 1 tsp paprika, 1 tbsp chili powder, 1 1/2 tbsp black pepper, 1 tsp thyme, 1 tbsp oregano and salt to taste. Mix this well for a minute or so.
3. Now add the sliced tomatoes and red bell pepper to this and coat them well. Pour some oil on top and cover with a lid. Keep this on low flame for 15 minutes while checking on it occasionally. When you see the tomatoes have become soft (their peel starts coming of easily), move on to the next step. If they are not yet soft, keep them covered on low flame for a few more minutes.
4. Now you can easily mash the softened tomatoes with a potato masher or with the back of a spoon/spatula. Keep doing this until you achieve desired consistency.
5. If you like your sauce to be chunky, you can stop here. If you prefer it smooth like me, allow it to cool down before you transfer it to a mixer/ food processor and blend well.
6. Now, add the sauce to the pan again and place on low heat. Stir continuously and adjust spices if required. Pour the tomato sauce to this. Stir for 2 more minutes.
Your marinara sauce is ready to use.
You can use this sauce as a base for your pasta and spaghetti, as a spread for pizza, buns, subs and just wherever you are in need of a tangy red sauce.
