Vegan Chicken masala



Chicken tikka masala is a popular and loved North Indian delicacy. Ever since I have gone vegan and explored the wonders of vegan substitutes, I have been trying to develop more recipes that substitute my non-vegan favorites. This one is exactly that!!

After a few trials, I bring to you my most favorite, tastiest and flavorful recipe. Did I say easy and quick to make ???


Now, what exactly makes this dish lip-smacking ? Let me tell you it's not the meat :P But the amazing combination of marinade and spices that culminate into this heavenly delight.


INGREDIENTS :


2 packs of Vezlay vegan mock meat (any other mock meat will do)

2 medium finely chopped onions

6 medium tomatoes pureed

10 cloves chopped garlic

15-20 garlic cloves

coriander

curry leaves

small block of garlic

lemon

4 small green chilies

2 chopped green chilies

oil

garam masala

masala

jeera

turmeric

cumin powder

coriander powder

paprika

salt

vegan cream / vegan mayonnaise

thyme (other herbs)


RECIPE :


1. For the marinate, blend the garlic cloves, coriander, ginger, 4 green chilies with a splash of water and salt. Coat the vegan chicken pieces with this marinate mix and keep covered for 30 min in the refrigerator or 2 hours outside.


2. To a pan, add some oil along with chopped garlic and jeera till golden brown. Then add curry leaves and chopped onions. Stir this till golden-brown.


3. It's time to add the spices. Add 1/2 tsp turmeric, 1 star anise, 1 tsp cumin powder, 1 tsp coriander powder, 4 tsp garam masala, 1/2 tsp paprika, 4 tsp masala to this and mix it all together. Stir for 2 minutes on low flame.


4. Now, add the marinated vegan chicken pieces to this and combine well. Pour tomato puree to this and mix it all together again. Add salt to taste and adjust other spices if needed. Cover with a lid and let cook for 2 minutes on low flame.


5. Open the lid and add some cream / mayonnaise to this (optional) and combine well. This will compliment the spices well. Add thyme or other herbs of choice and let simmer for 2 more minutes.


6. Take it off the heat and serve hot with bread/roti of choice.



You can eat this amazing dish with any bread of choice be it roti, naan, rumali roti, chapati or pav or even with rice. I assure you it will taste delicious with any combination. These are a few ways in which I enjoyed this heavenly dish.
